Since 1917 the Pallares family have been creating world famous knives in the Spanish region of Solsones. I have long been a fan of their small kitchen knives that we have stocked at WK for years.
Carbon is harder than stainless, making it sharper and more durable, however it does require more maintenance as it must be washed and dried immediately with an application of mineral oil to prevent rust. Over time the knife will develop a patina and feel worn in. The difference between Stainless and Carbon varieties of these knives come down to maintenance, sharpness and resistance to corrosion.
